We had a lot of yummy recipes presented for the 19.3 challenge so for the next few Fridays, we will share them with you.
Perhaps you can add them into your food prep for the week?
Gabby’s Vietnamese Chicken and Cashew nut noodles
50g Rice noodles
100g shredded chicken
A handful of mesclun greens or spinach
2 tbsp Roasted Cashew nuts
1 small grated carrot
1 spring onion finely chopped
1/4 cup mint and coriander
1 red chilli finely chopped
2tsp sweet chilli sauce
1 1/2 tsp Fish sauce
1 tbsp Lemon Juice
1/2 tsp sesame oil
1tsp lemongrass finely chopped.
Cook rice noodles in boiling salted water until soft (about 5min).
Mix all ingredients together for the dressing and toss in with the noodles and the other ingredients just before eating.
